NTU Baking Students

Crownpoint, NM — On Thursday, December 4, 2025, the NTU Culinary Arts Program concluded its fall semester final examinations. The final student of the semester was tasked with planning, preparing, cooking, and serving a six-course meal for six guests in the Hospitality Center.

Today’s final featured culinary student Santae, who was assisted throughout the process by Elley. Santae’s six-course menu began with Deviled Egg Steak Bites, followed by a Salad with Fig Balsamic Vinaigrette, Butternut Squash Soup, and Maple-Glazed Salmon. The entrée featured a Duck Roulade, and dessert was prepared tableside: Crêpe Suzette with Cinnamon Honey Ice Cream.

Santae made excellent use of the preparation time, sending dishes out of the kitchen at a steady and consistent pace. She personally presented each course, giving guests a brief overview of every dish before it was served. As part of her exam requirements, she was given a list of ingredients to incorporate into at least one of her dishes. The guests expressed their admiration for both the timely service and the creativity with which she used her assigned ingredients.

This fall semester, two culinary students completed their final exams and will advance to the next level in the Culinary Arts Program. NTU proudly offers the only culinary arts program on the Navajo Nation, and registration for the spring semester is now open.
